When dividing dough into individual portions, it is important to use a bench scraper, meat clever or sharp knife (not serrated), and to cut straight down through the dough. You can use sharp kitchen scissors to cut small pieces.

To divide into equal parts you could first cut the dough into 4 equal pieces by weight, then split each of those pieces in half by eye, then each of those halves into 3 pieces. Why do you divide dough?

Why is my dough cracking?
